HAPPY ALMOST LABOR DAY!

If you've been following me for a while here or on social media, you will know that I am 1) a foodie, and 2) I love to spend time with my family and friends around the holidays, sharing food and fun stories. So I am sharing a Joyner family favorite with you today. Mu husband Charles' famous JOYNER Pork Tenderloin (yumm!!!).

To make it easier, we've created this recipe in video format, so you can watch how we do it (or rather how he does it). CLICK ON THE IMAGE ABOVE TO WATCH THE VIDEO NOW.

Here is your shopping list (this does not have to be exact, season to taste):

  • 2 lbs pork tenderloin
  • 2 small yellow onions
  • 3 cloves garlic
  • 2 tbsp extra virgin olive oil
  • 1/4 cup soy sauce
  • 8 oz jar GREY POUPON dijon mustard 
  • 2 tbsp Fiesta chicken rub
  • 1 tsp garlic powder
  • 1 tsp Fiesta jalapeno rub (optional)

Coat the meat with the oil. Add chicken rub and garlic powder. Add optional jalapeno rub for added heat. Set aside

Cut up onions into small cubes. Dice garlic. Add to meat. Add dijon mustard and soy souce. Combine well and coat meat.

Transfer meat and marinade into sealed plastic container and place in frisge for 1 hour.

Remove meat from container and discard remaining marinade. Place meat on high heat grill to sear it, turning as needed, about 5-6 minutes.

Once seared, move meat to lower heat on grill, for about 10 minutes, turning frequently, until inside is cooked and only slightly pink.

Let sit for a couple of minutes before cutting.
